Old Dough Fermentation

Natural fermentation method used for Shengzhou-style Xiao Long Bao production. Our fermentation starter is maintained under controlled conditions to ensure stable flavor development and dough performance. Temperature and humidity are carefully monitored throughout the process to achieve consistent quality and food safety.

Dough Preparation & Resting

The fermented dough is mixed with selected flour and rested to achieve a thin yet resilient wrapper texture. Automated mixing and resting controls improve consistency while preserving the characteristics required for Shengzhou-style Xiao Long Bao, ensuring stability during frozen storage and transportation.

18-Fold Pleating Standard

Products follow an 18-fold pleating standard to form the signature “fish-mouth” opening. This structure helps retain soup during steaming and creates a consistent appearance. Trained operators perform the process according to standardized procedures and quality checks to ensure uniformity across batches.

Quick Freezing Technology

After forming, products enter rapid freezing tunnels reaching approximately -40°C. This quick-freezing process helps preserve soup content, maintain texture integrity, and lock in freshness. IQF (Individual Quick Freezing) technology keeps each piece separated for efficient handling and consistent quality.

Quality Inspection & Packaging

Each batch undergoes quality checks including visual inspection, weight verification, and routine microbiological testing. Products are packaged using food-grade materials with full traceability codes. Packaging operations are conducted under cold-chain control to help maintain product condition throughout storage and shipment.

Cold Chain Logistics

An unbroken cold chain is maintained from factory storage to overseas shipment. Temperature-controlled storage and transportation systems ensure products are kept at -18°C throughout the logistics process. Monitoring systems support temperature tracking at key stages.

Batch Traceability

Complete traceability from raw materials to finished products. Each batch is assigned a unique code linked to production date, ingredient sourcing, processing records, and quality inspection data, supporting transparency and regulatory requirements.

Export Compliance

Our documentation and production processes are prepared to support compliance requirements for multiple international markets, including the U.S., EU, and country-specific regulations. We assist partners with export documentation to help ensure smooth customs clearance.
